    A barista is an interesting profession very suitable for socially-minded people who like to talk, meet people, listen to stories and enjoy the memories of special “coffee moments.” One of these special memories is the story of a cup of Kopi Luwak coffee that a coffee patron shared with a barista friend.

    The coffee patron was very specific in his order of genuine gourmet Sumatra Mandheling coffee. He sighed at the absence of Kopi Luwak on the coffee menu. Kopi Luwak is among the most expensive coffees in the world. For this reason, it is not something a coffee shop would feature for regular consumption.

    However, the coffee patron said to the barista, “…you realize how delicious coffee really is when you taste a cup of genuine Kopi Luwak coffee as I did during my travels in Sumatra. It is a paradox to learn that a Paradoxurus or “Luwak,” basically a little mammal that goes unnoticed and is not very beautiful, produces “animal coffee” for which humans pay hundreds of dollars per pound! Sumatran locals call the little mammals “Luwak.” Paradoxurus is their scientific name more fitting for the high priced coffee droppings collected to make this marvelous coffee. These animals live in the trees in Sumatra. One of their favorite foods is red, ripe coffee cherries. Interestingly, they eat the cherries, bean, everything. Once the coffee cherries get to their stomach, the animal’s body produces enzymes and gastric juices that process the beans.

    A scientist from the University of Guelph, Ontario, Canada, Doctor Massimo Marcone, ran scientific tests on Kopi Luwak coffee. This scientist proved that proteolytic enzymes penetrated into all the “Luwak” beans. This is what causes substantial breakdown of storage proteins and reduces the caffeine level in this special coffee. Apparently, these animal enzymes prevent bitter taste and caffeine jitters. The “Luwak’s” stomach is almost like a natural “coffee mill.” When the beans exit through the animal’s digestive system, the beans are still intact.

    The animals move primarily at night. They creep along the branches of coffee trees. The animals sniff the coffee cherries and pick only the reddest and tastiest ones. They chew the exterior of the cherry but swallow the whole beans. Amazing to think there are Kopi Luwak farmers who follow these creatures through the Sumatran forests. The beans stay in the animals’ stomachs for about 36 hours before they come out. The farmers are familiar with the “Luwak” territory so they scour the grounds for animal droppings to collect. The farmers clean the beans thoroughly. Then they can roast the beans and grind them just like any other coffee. Funny to think that the origin designation for this coffee is “Kopi Luwak.” The price tag is a high one but worth every sip!…”

    The barista nodded and the coffee patron continued. “…Aah! Kopi Luwak coffee: rich and strong aroma. Full bodied like no other coffee, almost “syrupy” and with a hint of chocolate taste. It is coffee that lingers on the tongue with hints of malt coffee. A shame the production is so low, only about 500 pounds per year. But you know, it is not the only fruit digested by an animal, excreted and then collected for human consumption as a pricey drink. There are others….”

    The barista said, “Really, did not know that.” The coffee patron replied, while taking his last sip of Mandheling gourmet coffee, “…In Brazil, they have Jacu Bird Coffee. In Vietnam, the weasel is what produces Weasel Coffee. I find “Luwaks” prettier than weasels, don’t you? In the Philippines, the ‘civet” (a “Luwak” by another name) produces Kape Alamid Coffee. I could go on and tell you about the Argan oil story, a tale of nuts and tree climbing goats from Morocco. But, it is late and I need to go. By the way, the Sumatra Mandheling coffee was great!…”

    Yes, genuine gourmet Mandheling Coffee tastes great and it is available for the asking. Go ahead; treat yourself to a cup of this delicious specialty coffee!

    When they wanted to buy bread, surely you will choose bread that big fluffy and smooth. You probably would not choose a flat bread because it looks certainly do not draw.

    “Bread can be inflated because of the mixture of yeast (yeast) in the dough. Yeast reacts with the air to produce gas,” said Herman Ahmad, baker ASA Food, cooking demonstrations with current bakery Pane del Giorno in PT ASA Food, Sentul, Bogor.

    Herman added that the common mistakes made when making bread dough is too much milk.

    Many people think that the mixing of milk that much (even replace water with milk) will make more bread so soft and delicious. When in fact, too much milk it will cause the dough can not inflate perfectly. Ideally, the dough will expand 2-3 times its original size.

    “The batter can not expand because yeast can not absorb lactose from milk. Consequently maximal yeast can not react with air and cause gas,” he added. In the right amount, yeast could tolerate the presence of lactose, and react to form a gas.

    So how does the exact composition of the flour and milk?

    Herman advised to use only a third of the milk of the amount of flour used. If using powdered milk, then for one kilogram of flour, milk used is 300 grams. Whereas if you use milk, you can mix water and milk 50:50 according to the size prescribed water.

    “But it’s most convenient is to use powdered milk,” he said.

    Automatic and Manual Drip Coffee Machines

Add fresh water to the built-in reservoir, insert a filter in to the handy filter holder, measure your favorite coffee grounds and pour into the filter and then press the start button. Within minutes your senses are excited by the smell of freshly brewed hot coffee! Most models also have a built-in timer and a pot warmer included so that you can set your coffee to brew and be ready at any hour of the day or night, and kept constantly warm as well.

    Manual drip coffee brewers do take a bit more work since you need to boil the water using another heat source, but after that it is basically the same coffee making process of putting coffee grounds in the filter and pouring the hot water through the filter so that the coffee liquid is collected in the pot or container below. One great advantage of the manual drip coffee machine is that is can go most any where with you as it is not dependent upon having electricity to operate so it is great for camping and other outdoor activities.

    Pod Coffee Machines

    These are becoming very trendy and popular in recent years. Working similar to the automatic drip machines, they feature the ability to use pre-packaged containers or pods of specialty coffees to brew great tasting coffee. With many reputable coffee chains such as Starbucks now selling their most popular coffee blends in the pod format, consumers can get the same tasting cup of specialty coffee at home that they had to go out and purchase before at a much higher price.

    Automatic Espresso Coffee Brewer

    Espresso coffee makers have become much more affordable in recent years and because of this, they are gaining in popularity amongst serious coffee drinkers wanting something more than just a normal cup of coffee. There are currently three types of espresso coffee brewers to choose from, namely semi automatic, fully automatic, and super automatic. As a rule, the more automatic the espresso maker is, the less you need to do to brew your coffee, but unfortunately the more expensive it is to purchase. For example, where a semi-automatic model will tamp the coffee grounds, brew the coffee, fill your cup and eject the old grounds, an entirely automatic model will also grind the coffee for you as well, and the super automatic espresso coffee maker will do all of the above plus having additional features such as built-in water filters and self-cleaning.

    Stovetop Espresso Coffee Maker

    The stovetop espresso coffee brewers are basically a manual method for preparing espresso coffee when you do not have access to an automatic version or an electrical source of energy. This makes it an ideal coffee maker for taking outdoors on camping or fishing trips if you feel the need to make an espresso cup of coffee. First water is placed inside the underside boiler and then a cone filter is situated inside the boiler and filled with coffee grounds. Next the top is lightly tightened and the brewer is place over the heat source. After a few minutes, once the top of the boiler is filled with the freshly brewed coffee it is removed from the heat supply and the coffee is ready to be served. Here again, the absence of any warming feature means the coffee has to be served immediately.

    French Press Coffee Maker

    Also known as “press pots” or “plunger pots”, the French Press coffee makers are not as common as they once were. Preparing coffee is more work than it would be using any of the coffee makers already discussed as it is a manual coffee machine. The pot is actually a glass or porcelain tube consisted of a stainless, mesh plunger that acts like a filter. To make the coffee you must first measure the coffee grounds into the pot, then pour in almost boiling water. After allowing the coffee mixture to steep for a few minutes, the plunger is then pushed downwards and the liquid beverage is forced into the waiting cup or container. As there is no built-in heating plate or element beneath the coffee container, you must serve the coffee beverage immediately or place it into an insulated container to keep it hot for later.

    Percolator Coffee Maker

    At one time percolator coffee makers were the standard type of coffee brewers in most households, a role now held by the automatic drip machines. Although not as popular today, they still have their place when a coffee maker is required that can brew large volumes of coffee rather than the 10-14 cup limit or less in most other popular coffee machines sold these days. Modern percolators are available as stove top models and electric and can be programmed like other automatic coffee machines. The coffee making process is based on running water continuously over the coffee grounds, held within a metal filter, as the water is boiled. One drawback of this method is that the coffee often gets stronger and more bitter tasting the longer it goes through the brewing cycle.

    Vacuum Coffee Maker

    Perhaps the strangest looking type of coffee machine is the vacuum coffee maker. Looking like something from a science fiction movie, the apparatus is made up of two overlapping containers connect by a siphon tube. The filter is located in the bottom section of the upper container. To brew coffee, the user first adds coffee grounds to the upper container, then pours water into the lower container. Next the brewer is placed on top of a stove where the water is then boiled and the resulting steam is passed along through the siphon tube into the upper container. After about 3 minutes the container is removed from the heat source and the steam condenses back into liquid water which is forced through the filter and back into the lower unit. Your fresh pot of coffee is now sitting in the lower unit. An interesting way to brew a cup or pot of coffee!

    Needless to say, coffee lovers can select from a wide variety of coffee makers. From cheap stove top coffee pots to high end super automatic coffee machines, there is a coffee machine for every inclination as well as for every budget. Fantastic news! Now here is the unpleasant news. With all the many coffee machines to choose from today, even knowing the style you favor is not enough. Within each of the coffee maker styles noted above there are numerous different brand names and models to choose from.

    Coffee is a fantastic drink at any time of day, during any season of the year. That being said, a steaming hot cup of java isn’t always welcome once summer rolls around. Don’t let the summer heat deprive you of your favorite beverage when you can switch to iced coffee!

    During the warmest months of the year, iced coffee makes for a refreshing change of pace. While most cafes and coffee shops serve these cold concoctions, you may be wondering how to get iced coffee at home. Here are my tips for serving up delicious iced coffee without having to break a sweat:

    o Get ice.

    This may seem obvious, but you need ice to help you make iced coffee. If you don’t plan ahead by freezing some cubes, you won’t be able to make iced coffee when you want it. While plain old frozen water will do, I prefer freezing several of my favorite Keurig coffee brews in an ice cube tray. When combined with your freshly brewed coffee, these coffee cubes won’t water the drink down.

    o Brew coffee.

    Next, brew your favorite coffee variety. While you’re welcome to use a regular drip brewer or instant coffee, I prefer my Keurig single cup coffee maker. To make a cup of coffee in less than a minute, all I have to do is pop one of the K Cup portion packs into the machine and press a button. This allows me to brew multiple cups and different flavors very quickly – which means I can pour the fresh coffee over the coffee cubes and start drinking iced coffee that much sooner!

    o Mix things up.

    Once you’ve poured your freshly brewed coffee over your frozen coffee cubes, you can either drink it straight or add a splash of your favorite liquor. I recommend the flavors of coconut rum, Irish cream, butterscotch schnapps or crème de menthe. If you’re in the mood for extra flavor but don’t want alcohol, try adding a few drops of vanilla or adding some Italian-style flavored syrups.

    o Try something different.

    If you’d like a more slushy drink, skip the hot coffee. Simply throw a cup of the frozen coffee cubes into a blender and give it a few pulses. Don’t over do it with the blender or you’ll end up with soup. Pour the crushed coffee cubes into a mug and serve with a straw or spoon.

    Another fun idea is to create a coffee dessert by freezing your favorite brew in an ice pop mold. If you don’t have an ice pop mold, freeze plastic spoons into the coffee cubes you make in an ice cube tray. Once your coffee pops are frozen solid, remove them from the tray and enjoy. Be careful not to consume your chilled treats too quickly – it might be the first time you get brain freeze from your coffee!

Excellent for the office or dorm, you can also make hot water for tea, hot chocolate or instant soups. The k-cup coffee system made by Keurig has it’s own formula for brewing a fresh single serving . It consists of a single portion of ground beans in a container with a filter built-in.

    Thermal coffee makers are another option as we all strive to have our brew remain hot and fresh, most of the companies that produce thermal makers claim that you will have up to 4 hours of hot fresh coffee. I have a thermal maker and while it is true that the brew is still warm after a fashion I prefer to start over as I prefer to have fresh java, but my wife loves it.

    If you are not as picky as I am then perhaps a thermal coffee maker is right for you. There are a wide variety of options as far as color and size, one of the benefits is the ability to bring and place the crafe at the dinning room table while you entertain your guests.

    Space saver coffee makers are a great way to make your small kitchen bigger. Most manufactures make an under counter maker that can give you more space on your counter tops and it offers a great alternative to smaller makers like the single cup makers that we discussed earlier or 4 cup makers. Most all of them have a removable water reservoir that makes filling more efficient and prevents spills and cleaning the reservoir is much easier. You can still get your 10 or 12 cups that you require while keeping your kitchen less cluttered. Excellent for galley kitchens or apartment size kitchens and RV owners.

    The French press , also known as a press pot, coffee press, coffee plunger or cafetière, is a brewing device popularized by the French. Its operation is simple and can produce a stronger pot of coffee than some other types of java makers. The press pot consists of a narrow cylindrical container usually made of glass or clear plastic, equipped with a lid and a “plunger” also made of metal or plastic, which fits tightly in the cylinder and which has a fine wire or nylon mesh acting as a filter which can be cleaned and reused.

    The java is brewed by placing the coffee and water together, leaving to brew for a few minutes, then depressing the plunger to trap the grounds at the bottom of the container. Because the grounds remain in direct contact with the brewing water and the grounds are filtered from the water via a mesh instead of a paper filter, java brewed with the French press captures more of the brews flavor and essential oils, most of these are generally trapped in the paper or wire filters we use in the drip method of brewing. Because the used grounds remain in the drink after brewing, French pressed coffee should be served immediately so as to not become bitter. A typical 8-cup French press is considered expired after 20 – 25 minutes as there is no warmer plate as in many makers.

    Beans for use in a French press should be of a consistent, coarse grind. The use of a hand coffee grinder or manual coffee grinder gives a more consistent grind than the whirling blade variety of electric grinders. The ground should be more coarse than that used for a drip coffee filter, as a finer grind will seep through the press filter and into the coffee. A French press is also more portable and self contained than other makers. And make a great solution for a travel maker in such cases as back packing or camping. Despite the name, the French press is not noticeably more popular in France than in other countries. In most French households, coffee is usually prepared by drip brewing, using an electric coffee maker and paper filters.

    A vacuum maker brews coffee using two chambers where vapor pressure and vacuum produce brew which is clean, rich and smooth compared to other brewing methods. This type of maker is also known as vac pot , siphon or syphon coffee maker and was invented by Loeff of Berlin in the 1830s. These types of makers have been used for more than a century in many parts of the world.

    The chamber material can be pyrex, metal or plastic, and the filter can either be a glass rod, or a screen from cloth, paper or nylon. The Napier Vacuum Machine, presented in 1840, was an early example of this technique. While vacuum makers are generally to complex for everyday use, they were prized for producing a clear brew and were quite popular until the middle of the twentieth century.

    The idea of a vacuum coffee maker is to heat water in the lower vessel of the brewer until the expansion forces the water through a narrow tube into an upper vessel that contains the coffee grounds. When the lower vessel has more or less emptied itself and enough time has elapsed, the heat is removed and the resulting vacuum will draw the brewed beverage through a strainer back into the lower chamber from which it can be stored. The device must usually be taken apart to pour into a mug.

    I talk to a lot of people who are interested in becoming personal trainers. In this article, I will briefly share some thoughts on motives, attitudes and resources if you are thinking of becoming a personal trainer. I would recommend that you start by getting a legitimate certification. You can research the internet or talk to personal trainers at health clubs or private studios.

    As a suggestion, you could check out the International Association of Resistance Trainers, ISSA or ACE. These three certification organizations can be found on the internet and have several areas for you to consider. When considering a legitimate certification program, check out personal training / liability insurance. Be sure that the certificate you earn will have clear guidelines on how to purchase insurance once you actually start to train clients. There are many fitness certifications that are not recognized by any insurance companies, stay away from these. If you choose to train without insurance, you are taking a big risk. Depending on the physical location of where you will train your clients (club, private training studio, corporate fitness center) you will need to check with their individual requirements regarding acceptable certifications and insurance policies.

    After you have done your research on the above issues, if you are still interested, get started today! Whether you remain interested (out of the people who go into fitness training, many more drop out than stick with it) you can always use the information to further your own personal fitness programming. I believe that your initial training / certification will never be a waste. You will want to check out other certification programs later (may be required based on place of employment) in order to get plenty of exposure to all the different training methodologies.

    Try to stay grounded – many programs are not that reality based. With any training information, ask yourself the question: How will I use this for my own, as well as my clients, fitness program? I have many doctors, other trainers and people with sports / human performance degrees who hire me to help with training issues. The rubber hits the road when you have a client who is depending on you to give them a cardio, strength training, eating, supplementation, injury recovery and / or flexibility program complete with personalized scheduling. You do not need to have all the answers but try to establish your own process for giving them the answers or effective referrals for what they need.
